Even though the week seemed long, it was busy which left little time for meal prep. I had lots to do at work and some last minute meetings that messed up my schedule. But, I got a few things made.
First up, grilled salmon, grilled corn on the cob and roasted potatoes. The first corn of the season! Yummy! Can't wait until the really good varieties are available.
Next, Walnut & Chickpea with Tzatziki (which I can't find to link to the recipe) sauce. These were pretty good but I made them way too big and they were too filling. I'm not one who has a hard time finishing her meal and I was full half-way into it. I also made Grilled Stuffed Zucchini, which was good and I'd make again. I omitted the mozzarella though and just used a different Parmesan blend.
The rest of the week, we just made do with what we could find and ate a fruit pizza I made. I didn't take a picture of it because I just threw the raspberries and blueberries on top so it wasn't all pretty knowing that I had a picture of an older one from my cookbook project. Of course, I apparently copied over the wrong picture because it's itty-bitty but it'll do for now! It's just a sugar cookie crust, whipped cream and fruit...so good!!!
